Nintex has updated the Nintex Hawkeye capabilities with an Inventory lens which should help address this issue for you. If you are on a subscription license of Nintex, then you may be entitled to using Hawkeye as part of your cloud offering.
The lens provides a workflow summary of all workflows published in the tenant along with their locations and who published them and the date last published.

Understanding the idea of not sending an email. Have you thought about instead of assigning a task(s) which uses the email, using the create an item action and then creating a task action in the workflow task list?
While this does not bind the original workflow and task automatically, it is possible to do this and thus create a parent item and a child task.This would allow the user to view their task as normal from the list, and avoid the email issue. They can also complete the task in the workflow task list.
However, in order for this to work as it does using Nintex, you may have to create a child workflow that monitors the status of the task(s) and updates the parent item when the task is approved/rejected, or completed. Again completely doable but not as easy as using the assign a task action within Nintex.

This feedback has been incorporated into our new Preview mode of Universal Forms.
I will update this feature when we ship Universal Forms for SharePoint.
Your thought on that is great and would help. I think the easier you can get to the preview the better.

So you would want to redirect within the iFrame of the web part? Or are you expecting the browser window to redirect from the host page of web part? Let us know in the comments section below.
With the development of Universal Forms, we are looking at how the current form modes are supported in the existing product.
At this time we are still planning to continue using functions to detect form modes. This is so we are able to support migrations but also give a lot of flexibility in the rules engine.
We do not plan to bring different layouts to Universal Forms at this time. As we are introducing multipage to Universal Forms, we do need to figure out how a multipage form will be printed and is under consideration.
I will update this feature when we release an Advance Preview of Universal Forms if our position changes based on feedback.
I agree having the ability to create different views would be helpful. This goes with both the New/Edit/View but also having the ability to create different pages instead of just panels. A thought on that would be having a print view option to customize as most forms if pretty enough may be printed also.
